Percival Creek Taps First American Stout in Collaboration with ilk Beer

Percival Creek has launched its first-ever dark seasonal: an American Stout brewed in collaboration with Olympia’s own ilk Beer. Rich, roasty, and full-bodied, the new release marks an exciting step into darker territory for the student brewers at South Puget Sound Community College’s (SPSCC) Craft Brewing & Distilling program.

Percival Creek is a collaboration with SPSCC’s nationally recognized Craft Brewing & Distilling programs. The beers, ciders, and spirits created under the Percival Creek label are more than just beverages; they’re a showcase of the skills, dedication, and creativity of the next generation of craft beverage makers.

The idea for the collaboration began brewing during the grand opening of the Percival Creek Tasting Room in 2024. It was there that Scott Carroll, SPSCC’s Director of Business for the Tasting Room, connected with ilk Beer, a natural extension of his deep roots in the local brewing scene.

“Scott knows everybody,” said Chris Patrick, Assistant Director of Craft Brewing & Distilling. “It’s one of his superpowers. He saw a good fit with ilk and made it happen, just like that.”

Pat Jansen, brewer and co-founder of ilk Beer, was eager to work with the next generation of local brewers. “We had a great time collaborating with the students at SPSCC,” said Jansen. “They brought a lot of energy, curiosity, and creativity to the process. It’s always exciting to be part of an experience that helps people learn and grow in the craft.”

The result is a bold yet approachable American Stout featuring a smooth blend of roasted malts, subtle chocolate undertones, and a gentle hop finish.

Collaborative projects like this give students hands-on experience with recipe design, scaling production, and working with industry professionals, skills that are vital for a successful career in brewing and distilling.

The American Stout is available now on tap at the Percival Creek Tasting Room, located in the Tumwater Craft District. It will be available for a limited time while supplies last.
